Soutenbou 想天坊
This brewery was established in 1765, during edo period (江戸時代). Situated in Niigata (新潟), this region is famous for sake that is dry and subtly elegant
(known as “echigo karakuchi tanrei” 「越後 辛口淡麗」).
Soutenbo is dry and subtle, like that of usual style of Niigata, but by using a specially bred local rice strain 「高嶺錦」, the brewer added a strong backbone of umami in his sake. Hence, creating a new style that is best described as subtle umami 「淡麗旨口」 “tanrei umaikuchi”.
The current brewer is widely recognized as one of the top ranked brewers in Niigata region, has been awarded numerous awards in both regional and national competitions, including being awarded a gold medal for 17 years in a row in a Kanton competition held by the regional government.
